I'm running an ICS build on a SGS Vibrant for T-Mobile.  The Captivate is the AT&T version.  Honestly the best thing to do is go here:  http://forum.xda-developers.com/forumdisplay.php?f=706 - and start reading.  Read read read read.

Here's the Captivate directory, which will probably be the first item to read: http://forum.xda-developers.com/showthread.php?t=887525

The Samsung Galaxy line of devices are pretty much unbrickable, as long as you know how to follow directions...

As far as roms go, I highly suggest AOKP:  http://forum.xda-developers.com/showthread.php?t=1522881
